I, Marie-Annick (also known as Chef Marie), was born and raised in Paris, France where I grew up around gourmet foods and wines. My interest in healthy mindful eating started at a young age. As a world-class Table Tennis -player, I understood the importance of good nutrition in order to perform well.
After graduating from Century Business College Culinary and Food Management Programs more than 20 years ago, I started my chef career peeling more vegetables in one day than I could eat in a month! I washed dishes, cooked, and worked in pastry shop and restaurants under European Chefs to learn the trade. Moving up from cook to Chef in a French restaurant was a dream come true within a couple of years.
As restaurant hours were challenging with family life, I started teaching the culinary and pastry programs at Century Business College in San Diego. As I had the early morning shift, I had time to do something else. So, I decided to start my own business. In 2000, Chef Marie was born offering personal chef services with the intent to promote meal services, mindful eating, and healthy living. I prepared meals in clients' homes or catered from a rented professional kitchen. As the culinary school closed, I took a part-time job in the Irvine school district's main kitchen while continuing to grow my business. As coaching took more of my time, I decided to let go of the school job, meals, and catering. I concentrated on coaching (individuals and businesses) and writing specialized healthy cookbooks to promote health.
Endorsed by doctors, nutritionists, scientists, and fitness gurus; I worked on various projects related to diets, diabetes, heart disease, cancer, and food allergies. I designed and collaborated with the creation of curricula and certification programs for the wellness, fitness, and medical communities.
I volunteered in schools and helped launch healthy cooking contests through local high schools. I coached many individuals who wanted to improve their health, performance, and lifestyle.
Along the way, I kept up with a nutrition, wellness, and mindfulness studies passing various certifications. As wines were an interest to me, I passed my Wines and Spirits WSET- Level 2 Certification. This lead me to finish a book I worked on for years, "Food and Wine Pairing Demystified". I wrote publications articles and my work appeared in many magazines. I was a guest speaker at conferences, non-profit organizations, and on radio shows.
But more importantly, I am proud to have been a leader in the wellness world and instrumental in creating a whole new career field in the culinary and health industries. Nutritionists, educators, coaches, and Chefs who graduated from my "Healthy Chef Certification Program", or similar programs I helped create, are now promoting healthier eating all over the country. I am glad to have changed the lives of many for the better in the last 23 years. With my "Health Coaching" and "Mindful Eating" mission, I accomplished way more than I imagined for sure. I look forward to continuing to do so!
